Lime Purifies Sugar Juice

Limestone is used to purify the sugar juice extracted from beets. The lime is burned and then slaked by adding water before being mixed with the sugar juice.

The juice from the beets is acidic and contains pectins, proteins, and other unwanted substances that can affect taste and quality. Lime raises the pH level, neutralizes the acid, and precipitates impurities in the raw juice, which can then be removed.

Improves Crystallization

Lime can also help improve sugar crystallization in later stages of production. By controlling pH and removing unwanted substances, it creates a better environment for efficient sugar crystallization
